Power Avocado Toast


  1. Mash the avocado in a small bowl and season with salt and pepper.

  2. Heat a small nonstick skillet over low heat, spray with oil and gently crack the egg into the skillet. Cover and cook to your liking.

  3. Chop cucumber, Radish and Cilantro.

  4. Toast your slice of bread until golden and firm.

  5. Place mashed avocado over toast, top with egg, cucumber, Radish and Cilantro. Salt, pepper and hot sauce if desired.


  • 2 Eggs

  • ½  Avocado

  • ½ Cucumber

  • Radish

  • 2 Slices of Bread (I personally like Sprouted Grain Bread best)

  • Cilantro

  • Salt

  • Pepper
